Gluten Free Chocolate Chip Peanut Butter Muffins

These muffins are a divine combination of chocolate chips, banana, and peanut butter. Sort of like banana bread, but without the gluten…because they are FLOURLESS!

Yes, you read that right. And yes, I was suspicious too when I first saw this idea to make flourless muffins. I mean, doesn’t it sound kind of bland? And maybe just a bit too healthy? :/

The good news is that they are not bland and they are a divine, guilt-free dessert that you can indulge in as much as you want. I was secretly ecstatic because Jabel doesn’t normally enjoy muffins because he thinks they are too dry but I had to smile when I saw him eat 3 of these. 🙂 I considered that a win.:)

I also loved how quick these were to make and and since the batter is relatively thin, you can pour it straight into the muffin tins from your blender pitcher without making a big mess in the process. Definitely a little detail that I can appreciate. 🙂

They are also paired wonderfully with coffee or tea or even as an indulgent snack with a few sips of wine. ( notice my emphasis on “a few sips” 😉 )

Gluten Free Chocolate Chip Peanut butter muffins

Gluten Free Chocolate Chip Peanut butter muffins

Yield: 10 muffins
Prep Time15 min: 15 minutes
Cook Time 12-15 minutes: 15 minutes
Total Time: 30 minutes

Divine, spongy, light and full of flavor

Ingredients

  • 2 over-ripe bananas
  • 2 eggs
  • 1/2 cup organic peanut butter
  • 1/4 cup maple syrup
  • 2 Tablespoons raw honey
  • 1 tablespoon organic vanilla extract
  • 1/2 teaspoon baking soda
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 375 degrees. Grease a regular size muffin pan with olive oil cooking spray. Set aside. Combine all of the first 7 ingredients in a blender except for the chocolate chips. Blend until creamy and smooth.
  2. Use a rubber scraper to scrape down the sides of the blender and fold in the chocolate chips.
  3. Divide the batter evenly between approx. 10 muffins, making each one 3/4 full.
  4. Bake for 12- 15 minutes or until the tops are set .
  5. Allow the muffins to cool in the pan for 10 minutes than remove carefully from the pan and cool completely.
