Homemade Marshmallows ( without corn syrup)

If there is one thing I really like but hardly ever use or buy, it’s marshmallows.

Sure, there’s room for the occasional smores or toasted marshmallow or, Jabel’s favorite treat for Christmas, rice crispy treats.

I’m sure that to some, my reason for not having marshmallows on hand might seem preposterous. But to me, being slightly more health conscious than some, and also being aware that what I put in my body has either a positive or a negative effect…well marshmallows, as much as I hate to say, definitely lean more towards the negative.

Marshmallows generally contain a highly processed mixture of gelatin, corn syrup, sugar and artificial flavors and colors.

My alternative for all of those processed ingredients and artifical flavors and colors is to make a homemade version with no corn syrup and only the least processed ingredients I can. Organic cane sugar, organic vanilla, beef gelatin, ect. Now granted, these are sweet. They aren’t a health food. But I do feel much better eating these than any store bought versions. ( sorry Kraft)

We have especially enjoyed these with mugs of hot chocolate. My favorite hot chocolate blend is raw milk, cocoa and a tiny amount of stevia. Mix it until it’s steaming. Pour into mugs and top with several of these homemade marshmallows. They will melt into the chocolate, creating a slightly sweet, creamy texture. It’s a cozy drink for the long winter evenings.

One thing I did do, was to generously dust these in powdered sugar. Trust me, without the powdered sugar, they are quite sticky and will clump together quite annoyingly. When storing them, giving them a generous dusting will definitely prevent that. I used organic, so I felt better about it. 🙂

It’s really quite delightful and one bite will most likely put a big smile on your face. 🙂 In fact, I didn’t stop smiling for a whole day after making these…cause it was just so amazing! 🙂 Light, airy, sweet, puffy. It’s like eating a cloud. Except, given how clouds feel when you have to ride through them on an airplane, I’d much prefer eating a marshmallow. 🙂

I hope these will also put a smile on your face. Or share them with your nieces and nephews. Or your husband and children. I did all of those ( except my children, because I don’t yet have any) It was like magic. Soon everyone was smiling! And seeing as to how we need more of that in this world, go make yourself a batch of homemade marshmallows and spread those smiles… like pure, puffy, airy, sweet, magic. 🙂

Homemade Marshmallows ( without corn syrup)

Homemade Marshmallows ( without corn syrup)

Prep Time: 15 minutes
Cook Time: 20 minutes
Additional Time: 2 hours
Total Time: 2 hours 35 minutes

Light, puffy, clouds of sweetness

Ingredients

  • 3 tablespoons plain, beef gelatin
  • 1/3 cup cold water
  • 3 cups organic cane sugar (scant)
  • 1 1/2 cups water
  • 1 1/2 teaspoons organic vanilla
  • powdered sugar

Instructions

  1. Soak the gelatin in the 1/3 cup cold water. Set aside for 10 minutes.
  2. In a large kettle or pan, dissolve the sugar in the 1 1/2 cup of water over low heat. Stir constantly until sugar is dissolved.
  3. Whisk in the gelatin and continue whisking until it is completely dissolved.
  4. Raise the temperature and bring to a boil. Once it's boiling, don't stir it anymore.
  5. Boil it gently and, using a candy thermometer, Boil until the mixture hits 230- 234 degrees. ( thread stage) It can take from 7-15 minutes. Keep a close watch on the temperature, because you do NOT WANT TO LET IT GO OVER THAT TEMPERATURE! (That could effect the texture of your finished marshmallow. )
  6. Remove from the heat and pour into the bowl of a stand mixer. You have to whip these for a very long time so a stand mixer, like a kitchen aid, works best to get all that light and fluffy airiness into the mixture. Add the vanilla and beat until very thick and white. It takes about 10-15 minutes to whip this in the kitchen with a wire beater, which is preferable to get the right texture and consistency .
  7. Cover a 12 by 17 inch sheet pan with parchment paper. Make sure the sides are also covered. Spray with cooking spray to avoid sticking. Pour the mixture over the parchment paper and spread evenly.
  8. Let set at room temperature for about 2 hours. Dust with powdered sugar. Using a greased pizza cutter, cut the marsmallows into squares. If they just want to stick, dust with more powdered sugar. You can be very generous with that as it won't effect the flavor.
  9. For storing, use an air tight container or a ziplock bag. Always keep at room temperature. Toss the marshmallows in powdered sugar before storing to avoid sticking or clumping together.
  10. Enjoy roasted, with hot chocolate, in rice crispy treats or even as a sweet treat, as is. 🙂
